HC Roast Beef w/ Aujus and Mashed Potatoes

HC Roast beef is so tender that it melts in your mouth! This recipe is great for the family.

Ingredients:

  • 3lb HC Roast
  • 1 cup coffee
  • 1 bulb garlic (minced)
  • 1 yellow onion (chopped)
  • 2 cups water
  • Salt and Pepper to taste

Aujus Sauce

  • Use pan drippings
  • ½ cup of red wine Onions

Mashed Potatoes

  • 7-8 Red Potatoes
  • 1 ½ cup heavy cream
  • Salt and Pepper to taste.

Steps:

  1. Place roast in crock pot and add all ingredients to cook on low 8- 12 hours or until tender.
  2. Slice and serve with aujus sauce over mashed potatoes or as a hot roast beef sandwich.

Aujus Sauce

  1. Boil until a dark rich gravy forms, then pour over meat.

Mashed Potatoes

  1. Boil Potatoes until tender.
  2. Mash with a masher.
  3. Add heavy cream and cream potatoes until smooth and creamy.
